'The Recipe Section'
I swear; it's only been 24 hours since I put a random short recipe in under 'disaster scenarios' (no, it was a good recipe..), and already I've been told that there has to be a bunch of recipes in this 'book', or website, whatever it is destined to become. I am willing to be swayed, but it is with the understanding that there will be contributors other than myself to this section.
That said, I am looking forward to sharing flat bread recipes either in this area or under 'Earth Ovens'.
Spelt cakes with fresh corn
This recipe evolved one morning during a standoff with the cattle. It was 8/17/13, and it had been a good summer, albeit a very strange one. The garden was producing well- until the cattle determined to break in on the 16th. They were routed twice, and an emergency electric fence had been set up around the (weak) barbed wire enclosure.
Morning of the 17th came. I went down twice to check the perimeter, in between times starting a batch of tomatoes simmering with fresh basil.
For me, basil is a hopeless appetite stimulant. Eating becomes an obsession rather than an option. And so it was. I had some ears of fresh corn, and some freshly ground spelt.
So a hasty breakfast was in order.
Ingredients;
1 cup spelt flour,
1 cup milk,
1/4 tsp salt,
2 tsp baking powder,
a dash of sesame oil (if desired),
2 eggs.
Scrape the kernels from 2 ears of corn and saute in butter. Mix the eggs, milk, and sesame oil. Add the flour with enough more to get the texture you want. Add the salt and baking powder. Fold in the sauteed corn with butter. Cook as pancakes and serve with butter and/or syrup to your taste.
